Ingredients

百子櫃Abalone (dried or canned)30 g (1 piece)
街市Fresh chicken (whole or half)· chicken meat, blanched; the 汽鍋 steam-pot version uses 200 g25 g

Method

隔水燉 (double boiling, where the jar sits in water rather than over direct heat), in a single-serve jar of about 350 to 500 ml; a Yunnan 汽鍋 steam-pot version also exists. Put the ingredients in the 燉盅 and pour in boiling water to just cover, seal with cling film (traditionally 紗紙, mulberry paper) and put the lid on, fill the outer pot to a third or half way up the jar, and cook for 3 hours. Salt goes in last.

  1. Soak the 螺頭 to reconstitute it. Scrub the abalone clean.
  2. Blanch the chicken and the pork shin (汆水, a quick boil to clear the scum). Soak the dried shiitake until soft.
  3. Put everything into the 燉盅 (double-boiling jar) and pour in about 350 to 500 ml of boiling water.
  4. Seal with cling film, put the lid on, and double boil (隔水燉, the jar sits in water rather than over direct heat) for 3 hours.
  5. Season with salt before drinking.

Who should take care

  • not for people with gout, seafood is high in purines
  • no double-boiled tonics while a cold is still unresolved (general warning across this collection)
