Shiitake mushroom, carrot and red date soup with lean pork

百子櫃Dried shiitake mushroom· soaked until softened6 to 8
街市Carrot2
百子櫃Red jujube date· pitted6
街市Lean pork300 g
街市Fresh ginger2 slices

Method

  1. Soak the dried shiitake until softened and trim off the stems; peel the carrots and cut them into chunks.
  2. Cut the lean pork into large pieces and blanch it (汆水, a quick boil that draws out the blood and scum), then set aside.
  3. Put everything in the pot, add 2 litres of water and bring to the boil over high heat.
  4. Turn the heat to low and simmer for 1.5 to 2 hours, then season with salt.
