Method
Rinse the soybeans and soak them for 2 hours. Soak the snow fungus to reconstitute it, cut off the base and tear it into small florets. Peel and seed the papaya and cut it into large pieces. Blanch the pork bones (汆水, a quick boil to clear the scum). Bring 2.5 litres of water to the boil, add the soybeans, pork bones and honey dates and boil for 1 hour. Add the papaya and snow fungus and simmer over low heat for another hour. Season with salt and it is ready.

Who should take care people with gout should avoid the soybeans not for pregnant women (the latex in half-ripe papaya can trigger uterine contractions)
