Dry-fried beef ho fun

- A carbon-steel wok, flat-bottomed on an induction hob
- A wok spatula, for lifting and turning, not stirring
Method
- Velvet the beef: mix it with a teaspoon of soy, half a teaspoon of sugar, the cornflour and a tablespoon of water until the water is absorbed, seal with a tablespoon of oil and rest twenty minutes. Bring the noodles to room temperature: from the fridge, twenty seconds in the microwave or a minute in a steamer, then pull the strands apart; cold ho fun breaks. Mix a tablespoon of soy, the dark soy, a teaspoon of sugar, the sesame oil and the white pepper in a cup for the sauce.
- Heat the wok over the highest flame until it smokes. Two tablespoons of oil, swirl, then the beef in one layer; leave it twenty seconds, toss twenty seconds, and lift out at seventy percent. The hotel chef's point: the beef drinks the oil and gives it back, so no more oil goes in after it.
- Do not wash the wok. One tablespoon of oil, then the ginger shreds and onion for twenty seconds.
- Noodles in. Spread them across the wok and leave them thirty seconds to catch a little colour, then lift and turn from the bottom with the spatula (lift, never stir; stirring breaks them). Pour the sauce down the hot side of the wok, not onto the noodles, and toss until every strand is evenly brown, about two minutes.
- Beef back in, then the sprouts and yellow chives; thirty seconds more, so the sprouts are hot but still crisp. Straight onto the plate.
- The shops' rule: two plates at most in a home wok; four portions at once turns to soup. A domestic gas ring gives a third of a café jet burner's heat and an induction hob cannot toss at all; the answer is to heat the empty wok three minutes, keep everything dry, never stir, and accept a paler plate. It is still a good plate of beef ho fun, just without the smoke.
Take care
- Contains soy and wheat (soy sauces) and sesame. The beef is sliced thin and cooks through in the toss; the velvet does not preserve it, so it goes from the fridge to the wok, not the bench. Fresh ho fun is a same-day product: refrigerate and use within two days, and discard it if it smells sour. A smoking wok sets off Australian smoke alarms; open the window first.
The story
Beef ho fun is the test dish of a Cantonese wok cook, the one a café hires on, because there is nowhere to hide: no sauce, no gravy, only heat and timing. The Michelin Guide's glossary explains that 鑊氣 comes only at extreme heat, with the wok smoking before the oil goes in. Its home is the 大牌檔 and the café wok station, and it is the dish a family orders out because it cannot be done at home, which is exactly why this page has to be honest about the flame.
