Char siu sauce
叉燒醬
A red-brown, sweet and salty bottled sauce for marinating char siu. Most home char siu starts from it, with chu hou paste, rose wine and five-spice added. It is in the supermarket Asian aisle, Lee Kum Kee's for example. It is very sweet and catches quickly in the oven.

- Contains soy and wheat, and some brands sesame, all mandatory-declaration allergens in Australia; read the label.
Preparation
Mix with the rest of the marinade and give the meat at least four hours.
