Chu hou paste
柱侯醬
The Foshan braising paste of soybean paste, garlic, ginger, sugar and sesame paste: salty-sweet and rich. Braised brisket with radish, chu hou brisket and braised duck depend on it. Surprisingly, both Coles and Woolworths stock it.

Preparation
Fry ginger and garlic, then the paste for a moment, before the meat goes in.
Origin
Foshan, Guangdong. At Woolworths and Coles, Lee Kum Kee 368g for example; Asian grocers carry 240g jars.
