Cream of chicken soup
A tinned condensed soup, Campbell's for example: it comes out as a thick, pale paste that only becomes soup once water or milk is stirred in. It is why a café's ham macaroni soup is faintly creamy, one part cream of chicken to two parts chicken stock to two parts water, and some kitchens use it as the shortcut white sauce on a baked pork chop rice. It is a fixture of the tinned-soup shelf at Coles and Woolworths.
Cautions: read first
- Contains milk and wheat, and the tin usually declares soy and sometimes egg, all mandatory-declaration allergens in Australia; read the label before buying.
- High in sodium: two tablespoons is enough for a bowl of macaroni soup, so taste before adding any salt.
Preparation
Loosen a spoonful with a little hot stock before it goes into the pot so it does not go lumpy.
