Fish balls
魚蛋
Balls of fish paste bound with starch: the curry fish balls of a Hong Kong street stall, cart noodles and hotpot all use them. Chinese grocers sell them frozen in bags; they go in straight from frozen and are done when they float and are hot through. There are golden fried ones and white unfried ones, and cart noodles mostly use the fried kind.
