Large, dark red, kidney-shaped dried beans, one of the mixed pulses of 喳咋: black-eyed beans, adzuki, mung, kidney beans and chickpeas with sago, taro and coconut milk, the pot that came from the Macau barracks. Hong Kong grocers sell a ready 喳咋料 mix; Australia does not, so pick the beans from the supermarket pulse shelf: Coles and Woolworths carry dried red kidney beans, Indian grocers call them rajma, and tinned ones work if they go in at the end.

- Dried kidney beans carry a lectin that raw or under-cooked beans keep and that causes vomiting and stomach pain: soak overnight and boil hard for at least ten minutes before the long simmer.

Soak overnight, discard the water, boil hard ten minutes, then simmer.
