Vegetarian oyster sauce
素蠔油
An oyster sauce made from shiitake, with no oyster in it, so it is vegetarian. It looks and works just like oyster sauce, thick and savoury, with a slightly lighter taste. It goes into the New Year's-morning 齋 pot and into 燜冬菇 for a 齋 table; real oyster sauce tastes as good, but then the dish is no longer 齋.
