Custard powder

Cornflour tinted yellow and scented with vanilla, no egg in it. Hong Kong 馬拉糕, custard-bun filling, egg waffles, 格仔餅 and the café egg tart take a spoon or two for the colour and the smell. Every Australian supermarket baking aisle has it (the Foster Clark's 350 g tin, for example), the same thing as the tin Hong Kong uses; Asian grocers carry Hong Kong bakery brands too.
Cautions: read first
- The powder itself is starch and is usually made up with milk; read the tin for wheat and milk.
Preparation
Sift with the dry flour; for a custard, slake it in a little cold milk first.
