Tapioca starch
Starch milled from cassava root; cooked, it turns clear, elastic and chewy, unlike the floury set of cornflour. It is one of the three starches in Hong Kong grass jelly (cornflour, rice flour, tapioca), the spoonful that gives egg-waffle batter its chew, and some use it in place of wheat starch in 缽仔糕 for a bouncier cake. Tapioca starch at Asian grocers (Erawan's blue bag, for example) and the tapioca flour in the supermarket health aisle are the same product.
Preparation
Slake in cold water before it goes in; too much makes things rubbery.
