Hoisin sauce

There is no seafood in hoisin: it is soybean paste sweetened with sugar, garlic, vinegar and five-spice, dark red and thick. It goes into roast-meat marinades and braised ribs, and it is the dipping sauce for lettuce wraps and Peking duck.
