A jam of coconut milk, egg, sugar and pandan cooked slowly until thick, which came to Hong Kong from the Straits; the café's kaya toast is a thick slice spread with kaya and a slab of butter. The green one is pandan (Nonya kaya), the brown one Hainanese (caramelised). Coles and Woolworths carry both kinds (Glory 400g, for example), and so do Asian grocers; the café one is the green.
