楊枝甘露, mango pudding and mango 糯米糍 all want a ripe, fragrant mango; Hong Kong uses the Philippine 呂宋芒. Australia is a mango country and these are the desserts that are easier here: Kensington Pride (KP, Bowen) has the perfume closest to 呂宋芒 and purées best; Calypso and R2E2 are firm and fibreless and dice cleanly; Honey Gold comes late in summer. The season opens in September in the Northern Territory, peaks October to December and runs to March; out of season, frozen supermarket mango purées well, with fresh dice from whatever is there.
Preparation
Use it when it smells ripe and the skin just gives; purée half and dice half.
