Pomelo
The largest citrus, thick-skinned, with flesh that pulls apart into separate sacs, sweet with a faint bitterness. 楊枝甘露 is built on those sacs, scattered over the mango and sago. Australian-grown pomelo (Pomelo, Pomelo Pink, about 1 kg each) is at Coles, Woolworths, Asian grocers and markets in autumn and winter; out of season ruby grapefruit stands in, sacs separated and the bitter membrane removed, for a sourer, pinker bowl, which is what most Australian versions use.
Preparation
Cut away the thick peel, strip the white membrane from each segment and pull the flesh into sacs.
Origin
Rong County, Guangxi (沙田柚). Australian pomelo at Coles (about 1 kg each), Woolworths and Asian grocers in autumn and winter; grapefruit year round, best winter to spring.
