The sweet-sour half of sweet and sour pork. Hong Kong flats mostly use tinned pineapple rings on a weeknight, cut into chunks and folded in with the heat off; fresh is sweeter but turns sour if cooked, so it goes in off the heat too. Tinned pineapple pieces in juice are on every Australian supermarket shelf all year, and fresh pineapples are cheapest in summer.

Preparation

Drain tinned pineapple and cut into chunks; peel, core and chunk a fresh one. Fold in with the heat off.
