南乳
Fermented bean curd coloured deep red with red yeast rice: a cube of it, salty and intensely savoury. It is the soul of braised pork hock in nam yue, of the vegetarian nam yue braise and of the marinade for fried prawn balls; one cube mashed with a spoon of its brine does a whole pot.
Cautions: read first
- Contains soy, a mandatory-declaration allergen in Australia; very salty, one cube is enough.
Preparation
Mash a cube with a tablespoon of the brine from the jar.
Origin
Guangdong. At Asian grocers, Guanghe for example; not in supermarkets.
