Ingredients

街市Carrot1
街市Lotus root300 g
百子櫃Euryale seed / foxnut20 g (half a tael)
百子櫃Lotus seed20 g (half a tael)
百子櫃Dried lily bulb20 g (half a tael)
百子櫃Job's tears / coix seed· written 薏仁 in the original20 g (half a tael)
百子櫃Dried fig10
街市Pork spare ribs· leave out for a vegetarian version300 g

Method

  1. Rinse the 芡實 euryale seeds, lotus seeds, lily bulb and job's tears and soak them for half an hour.
  2. Peel the lotus root and carrot and cut them into pieces.
  3. Blanch the pork ribs (汆水, a quick boil to draw out blood and scum), or leave the ribs out for a vegetarian version.
  4. Bring 2.5 litres of water to the boil and add everything, figs included.
  5. Boil hard for 10 minutes, turn down to low and simmer for 2 hours, then salt it and it is ready.
