Ingredients

街市Papaya1
百子櫃Peanut75 g
百子櫃Black-eyed pea75 g
百子櫃Red jujube date4

Method

  1. Wash the peanuts and black-eyed peas and soak them for 1 hour.
  2. Snip the nails off the chicken feet and blanch them (汆水, a quick boil that draws out the blood and scum); blanch the pork bones as well.
  3. Peel and deseed the papaya and cut it into pieces.
  4. Bring 2.5 litres of water to the boil and put in all the ingredients along with the red dates.
  5. Boil hard for 10 minutes, turn the heat to low and simmer for 2 hours, then season with salt and it is ready.
