Desiccated coconut

Fine dried shreds of coconut flesh: the cocktail-bun filling (butter, sugar, coconut, milk powder), the coat on 糯米糍, coconut buns and the peanut filling of 煎堆. Fine and unsweetened (desiccated) is the one, in every Australian supermarket baking aisle; the sweetened American shred and the big coconut flakes are wrong.

- Coconut is not on Australia's mandatory allergen list, but some Australian labels declare it as a tree nut; anyone with a tree-nut allergy decides for themselves.
Preparation
Use as is for a coating; for a filling, work it into softened butter.
