Ingredients

百子櫃Glehnia root40 g (1 tael)
百子櫃Solomon's seal rhizome40 g (1 tael)
街市Apple1
百子櫃Snow fungus· soaked to swell20 g (5 mace)
百子櫃Sweet apricot kernel20 g (5 mace)
百子櫃Red jujube date10
街市Pork spare ribs300 g

Method

  1. Blanch the pork ribs (汆水, a quick boil to draw out blood and scum).
  2. Soak the snow fungus until it swells, tear it into small florets and cut off the hard base.
  3. Core the snow pears and the apple and cut them into pieces. Rinse the 沙參 glehnia root, 玉竹 Solomon's seal, sweet apricot kernels and red dates.
  4. Put everything in the pot with 2.5 litres of water and bring to the boil over high heat.
  5. Turn down to low, simmer for 2 hours and season with salt.
